Tri-color quinoa brings all the flavor!

When I get a craving for Mexican food, I try to think of grains over carbs. Trust me, I am a carb feign; I would eat them all day and night if I could. It’s an easy recipe that only has a few essential ingredients. You’ll be getting your grains and vitamins. Did you know onions are high in Vitamin C, B6, Calcium, and Fiber? Get out of here. Keep slicing. Plus, the garlic will keep those unwanted strangers away and boost your immune system while it’s at it.

Saute onions, pepper, and garlic in Palermo First Cold Pressed Extra Virgin Olive Oil, 16 oz.“>extra virgin olive oil  until translucent or fork tender. HINT: You can boil the quinoa while you’re waiting for your veggies to saute.  Add 2 cups of water for 1 cup of quinoa. Cook for approximately 15 minutes. Add cooked quinoa (they should have spiraled out) with the red kidney beans and mix thoroughly. I also added a little salsa on top to bring out the flavor.  See below on my insta!

Add your greens to your oatmeal!

No dairy, no problem!

Dairy has a lot of additives, extra fat, and also slows your body down.  It takes even longer to digest dairy. Many of us believe that dairy is beneficial for calcium; however, coconut milk, kale, collard greens, broccoli, figs, and oranges are other highly enriched calcium dairy alternatives. I recently decided to transition to a vegan lifestyle. Immediately, I noticed I had more energy and even shed a few extra pounds. My meals are more simple and full of veggies and fruits. I love to start my day with a smoothie, and end it with a salad and a protein, but for snackin’ time I have nuts, clementines and popcorn. Start to eliminate dairy and see what happens!

Cooking with quinoa

Many people have a false impression of quinoa. They think “eww that doesn’t taste good at all” – surprise surprise it’s actually quite delicious and nutritious. You have to flavor it up with seasonings like garlic, Himalayan sea salt, pepper, oregano, and bam you have a hearty meal.

Slice 1-2 tomatoes into small finely chopped pieces. Use 1-2 garlic cloves and chop into tiny chunks. Grab a can of kidney beans drain and rinse. You can add black olives or any other olive of choice to the dish, but make sure you cut them in half. Saute in Botticelli’s extra virgin olive oil until fully seasoned with sea salt, pepper, oregano, garlic and keep mixing to make sure everything gets the proper flavoring.

Add 1 cup of uncooked quinoa to boiling water. Let it cook for about 18 minutes until you see them puff up and become similar to a rice substance. Now, you know it’s ready. Drain the rest of the water left in the pot and add the quiona to your sauteed mixture of goodness.

Serve hot or cold and enjoy!

More grains, less gains

Trying to get rid of that leftover winter storage and make room for bikini season, fear no more eat grains & have less weight gain. When I say grains, I mean real grains not overly processed genetically modified versions of the real good stuff (foods); you know that kinds that simply nourish your mind, body, and soul.

Think about it, did our ancestors eat anything put in a can or stored in a freezer? Highly doubtful, all their foods were fresh from the farmland and picked right off the land. I’m talking about quiona, fresh rolled oats, brown rice, 100% whole wheat breads and wraps without any additives like high fructose corn syrup and ya know pronounceable ingredients.

Keep grains apart of your diet and you’ll be sure to shed the pounds right off. Moderate exercise is a key component to an overall healthy lifestyle. Of course organic is always a better choice.

Recently, I’ve been cutting back on carbs including breads & pastas. I have felt satisfied longer, more energetic, and less bloated. My stomach looks flatter than ever! What did I do?

  • Limit carb intake – switch to grains including brown rice, quinoa, oatmeal,  flax flakes, granola
  • Switch to probiotic dairy – kefir, yogurt, dark chocolate with hemp seeds , cacao, chia seeds as topping with sunflower butter
  • Hot foods after every meal – tea & soups
